Michael Salafia shared thisHonored to join the opening panel at CStore Connections this week in Jacksonville — AI at Work: Transforming the Future of the Convenience Store — alongside the digital and operations leaders at EG America, Cubby's, and Parker's Kitchen. My prediction to the room: In the next 24 months, AI will completely reshape back office infrastructure for the convenience and gas industry. A few things I took away from the conversation: The operators leaning into AI aren't doing it for the press release — they're doing it because foodservice margins, labor, and shrink demand it. The gap between "AI curious" and "AI deployed" is closing fast. Independents who start experimenting now will not be behind. The most useful AI in this industry is unglamorous — better forecasts, cleaner schedules, tighter inventory, smarter merchandising. At STAX, we broker and develop gas stations across Florida's top MSAs. At our sibling operating company Re-Up, we renovate and modernize second-generation stations and run them ourselves. That combination — capital markets on one side, store-level P&L on the other — is how we underwrite deals and how we decide which AI actually matters. This morning, attendees got the chance to sit in on two very informative educational sessions covering AI and foodservice, respectively. The first session, titled "AI at Work: Transforming the Future of the Convenience Store," featured panelists Amy Wood, Michael Salafia, Mike Wilson and Scott Smith as they went in depth about the complex world of artificial intelligence, and how c-store retailers can harness the technology to empower employees and streamline operations. Following that session, panelists Jeremy Haack, Mario Spina and Elizabeth Hoffer talked foodservice strategies, commissary, food waste and more in a session titled "Optimizing the Kitchen: Boosting Foodservice Profitability While Managing Costs." The show will continue through tomorrow with burning issue exchanges, breakout discussions, a keynote session from Stinker Stores President and CEO Nate Brazier and much more.
