Designed HACCP plan for Happy Clucker’s Frozen pre-cooked chicken patties given production flow chart and list of validated parameters:
    • Identified all hazards (biological, chemical, and physical) for entire production process from receiving of raw materials to shipping of final product.
    • Analyzed all hazards to determine/justify if steps qualify as critical control points.
    • Identified all critical control points, their critical limits, and how they were monitored.
    • Verified frequency in which critical control points were monitored, validated that the critical limits were appropriately met, and established how records were kept.
